Some healthier winter recipes

Gingerbread is one of the most popular baked goods during December but you may worry about how healthy it is.  This recipe makes some gingerbread that we found to be quite delicious using some healthier ingredients than many other recipes.

Try this on for size:
Two cups whole wheat pastry flour
One large egg (instead of two) and two large egg whites
One cup of natural brown sugar substitute like Sugar in the Raw
3/4 cup canola oil

This recipe cuts down the whole egg content and replaces the all-purpose flour and vegetable oil.

Fruit salad is another winter favorite but depending on the recipe it can range from moderately healthy to wildly fattening.  Personally, I can’t get enough of the fruit salad my mother used to make, which wasn’t exactly healthy...

Great pumpkin recipes for fall

It’s the time of year when pumpkins are everywhere and not-so-nutritious sweets abound.  While many partake in sugar-fueled shenanigans, you can find healthier options by taking one of those pumpkins and putting it to good use.

Pumpkins have a good dose of vitamin C, potassium and beta-carotene.  As a fiber source they tend to help curb apetite while giving you more food for the same calorie count.  The zinc and unsaturated fatty acids in pumpkin seeds and pumpkin seed oil can be effective when used for prostate ailments.

Eggplant Bruschetta

Eggplant BruschettaBy Yvonne Segal – With the abundance of eggplant, peppers, tomatoes, garlic and basil in my garden or our local farmers market I decided to look for some delicious recipes involving these ingredients. Eggplant Bruschetta

1 large globe eggplant roasted
2 med. red, orange, yellow or purple, peppers, roasted

The benefits of hummingbirds and how to attract them
